Gluten Free Pumpkin Bars
For all the Christmas festivities our editors decided to share a favorite recipe with a photo story to melt your hearts. Heather's girls and myself (Jen) are allergic to gluten, so this recipe is 100% gluten free! Heather is a master at making delicious allergy friendly recipes, and we hope you enjoy this quick and easy treat!

Pumpkin Bars (Gluten Free)
Ingredients
For the Crust:
2 1/2 cups crushed GF pretzels
3 tablespoons of sugar
1/3 cup of butter
For the filling:
2 cups pumpkin puree
1/4 cup oil
1/4 cup maple syrup
1/4 cup of milk (dairy free options if needed!)
1 tsp cinnamon
1 tsp ground cloves
1/4 cup water
1 Tbsp gelatin
Instructions
Combine crust ingredients together in a large glass baking dish and bake for 10 minutes at 350°F.
In a large bowl combine milk, puree, syrup, oil, cream, spices, and mix together.
Add water to a saucepan and bring to a boil. Add gelatin and let sit 2-3 minutes on low heat. After 2-3 minutes wisk gelatin & water mixture until frothy. Add gelatin to puree in a large bowl and mix.
Pour puree mixture over crust and refrigerate for 3-4 hours!
